For the preparation of cottage cheese, you must pay particular attention to the temperature and proportions.
  1. Start by pouring the milk into a large saucepan.
  2. Turn on the flame and make sure it is at a minimum, otherwise the milk will boil very quickly and ruin the preparation.
  3. At this point, let the milk heat up in the pot and immerse a cooking thermometer, so that it does not exceed 120 ° C. Precisely this cooking and temperature step is essential.
  4. Once you have reached the exact cooking point, remove from the heat and start adding the white vinegar.
  5. Mix slowly with the milk, without ever stopping, with a wooden spoon.
  6. Once this is done, you can start removing the solid parts altogether. To do this, you will need a thin cotton cloth that you will place on a container or pot like a sieve.
  7. Upstairs you will pour the mixture waiting for it to drip, slowly and without sudden movements. The idea is that the mixture is homogeneous and compact.
  8. Let it drain for at least 5 minutes, until the pot it was in is completely empty.

Final steps to prepare cottage cheese:

  1. Warning! You will need to wet the mixture of homemade cottage cheese at regular intervals with a cloth moistened with moderately cold water. Repeat up to 7 consecutive times.
  2. As for the cloth, you will have to proceed by squeezing and releasing it to obtain a good pouring and curdling of the cheese with cold water.
  3. Once the previous steps have been completed, you will move the preparation into another dry container, adding the salt at this point.
  4. The amount of salt will be subjective; you will have to experiment and adjust for better results.
  5. Let the mixture rest for 3 hours, put it in the fridge and you have finished preparing the cottage cheese.
