If you are a fan of this splendid vegetable, you cannot give up taking a look at these three delicious recipes of an appetizer, a main course and a dessert. Here is a complete pumpkin-based menu, these are recipes to be enjoyed all in the same meal or on different occasions.

Appetizer in the complete menu based on pumpkin: pumpkin cream

It is very easy to prepare and much healthier than what is sold ready-made. The ingredients are:

  • Half a kilo of pumpkin
  • 3 carrots
  • 1 leek
  • 1 potato
  • 100 ml of cream
  • salt
  • Olive oil

Clean and cut all the vegetables into small pieces. Cook them with water and salt. Leave them for 20 minutes until they are soft enough to make a puree, then drain and mash them. Puree the vegetables until a cream is formed, then add the cream and olive oil. Pour everything into the pot to heat them. Serve in a bowl.

The great thing about this dish is that you can make the filling with your favorite ingredients, from meat to rice. Unleash your imagination and indulge yourself! To prepare this recipe you will need:

  • 1 pumpkin cut into slices or a whole pumpkin without pulp
  • Chicken breast, ground beef or rice for the filling
  • 1 onion
  • Olive oil
  • salt
  • Grated cheese
  • Celery
  • Leek
  • Milk
  • nutmeg
  • Cumin

Cook the pumpkin in a pot and the leek and celery in another, to prepare a very simple broth (if you want to use rice as a filling, you can cook it directly in the broth). Cook the meat or chicken in a pan, sautéed with onion.

When everything is ready, fill the pumpkin and pour a little milk and grated cheese over it. Bake until the pumpkin is browned. Season with nutmeg and cumin to taste.

Did you think that pumpkin was used only for savory dishes? In fact, in many countries it is mainly used to prepare desserts, such as this cake. The ingredients are as follows.

For the dough:

  • 250 grams of flour
  • A spoonful of yeast
  • 100 ml of milk
  • A spoon of sugar
  • 100 ml of olive oil

For the cream:

  • 200 gr of pumpkin
  • 200 ml of milk
  • 100 grams of sugar
  • 30 grams of flour
  • 2 eggs
  • Zest of one lemon
  • Cinnamon

To cover it:

  • Sugar, one tablespoon
  • Rum, a spoon
  • Water, one tablespoon
  • Strawberries, apples, pears, peaches or other fruit to taste (possibly also walnuts, almonds or hazelnuts)

To prepare the dough, mix all the ingredients and bake for 30 minutes, until it is lightly golden. For the cream, boil the milk with the cinnamon and lemon zest; then add the cooked and chopped pumpkin with a blender.

Add the eggs, sugar and flour and mix until a thick cream has formed. Turn with a spoon over low heat to thicken the cream. To decorate the cake, cut the fruit into slices. Then mix it with the water, sugar and rum and boil for 5 minutes until it is in syrup.

Let cool, then fill the dough with the cream and pour the fruit in syrup over the cake.
