1. Chia seed treats

Ingredients

  • toasted chia seeds: 4 cups (about 500g)
  • sugar: ¾ cup (150 g)
  • two egg yolks
  • baking powder: one sachet (30 g)
  • olive oil: one tablespoon (15 ml)
  • powdered sugar to decorate

Preparation

  1. In a bowl, beat the egg yolks with the sugar, chia, oil and yeast, until the dough is consistent and homogeneous.
  2. Then form balls the size of a walnut, which you will later pass on a surface sprinkled with sugar.
  3. Arrange them in a baking tray covered with parchment paper, leaving the part covered with sugar on top. Cook for 20 minutes at 170 degrees.
  4. Let them cool before consuming them.

2. Chocolate and chia pudding

Ingredients

  • Almond or coconut milk: two glasses (400 ml)
  • 6 dates
  • chia seeds: one cup (120 g)
  • cocoa powder: ⅓ cup (50 g)
  • butter: 50 g
  • vanilla extract
  • honey (optional): one tablespoon (25 g)

Preparation

  1. Mix the chia seeds with the milk.
  2. Add the butter, dates, cocoa powder, vanilla and honey. Mix until you get a homogeneous mixture.
  3. Refrigerate for at least four hours.
  4. Before serving it, stir it or blend it in order to give it a smooth and creamy consistency.

3. Fruit jam and chia seeds

Ingredients

  • fruit to taste (300 g)
  • chia seeds: one tablespoon (15 g)
  • honey or other sweetener: 5 tbsp
  • water

Preparation

  • Cook the fruit with a little water over low heat for about ten minutes.
  • After this time, transfer the fruit to a bowl, then mash it with a fork.
  • You can now add the chia seeds and honey (or other sweetener). Cook for another two minutes.
  • Check that the jam is to your taste. You can, for example, add more water if it seems too thick, or more honey if it is not very sweet.

4. Tuna with chia seeds and soy sauce

Ingredients

  • tuna fillet: 500 g
  • soy sauce: 2 tablespoons (30 ml)
  • chia seeds: one cup (120 g)
  • the juice of an orange
  • lemon juice: 2 tablespoons (30 ml)
  • one egg yolk
  • olive oil
  • ½ cup of water (125 ml)
  • pepper

Preparation

  1. Put the tuna to macerate for 20 minutes in a bowl in which you have mixed the soy sauce, a tablespoon of olive oil, lemon and orange juice.
  2. Beat the egg yolk with half a cup of water.
  3. In a dish, mix the chia seeds with the pepper.
  4. Pass the tuna fillets first in the diluted yolk and then in the chia seeds.
  5. Fry them in a little olive oil at medium temperature until golden on both sides.

5. Chicken stuffed with chia seeds and mushrooms

Ingredients

  • 4 chicken breasts (about 500 g)
  • chopped mushrooms: ½ cup (75 g)
  • chia seeds: 1 cup (120 g)
  • cooking cream: 3 tablespoons (45 ml)
  • chopped onion (50 g)
  • breadcrumbs or chopped crackers
  • butter or margarine (30 g)
  • salt and pepper

Preparation

  1. Cut the chicken breast into fillets, which you will season with salt and pepper.
  2. In a bowl, mix the mushrooms with the cooking cream, chia seeds, onion and breadcrumbs.
  3. Fill the fillets with this filling, roll them up and then close them with a toothpick.
  4. Arrange them in a greased pan, sprinkle them with the rest of the breadcrumbs and a few flakes of butter or margarine.
  5. Put in the oven for 30 minutes at a very high temperature.
