It must be emphasized that milk and dairy products are to be included in the diet. Although their consumption is still the subject of controversy, research published in Food & Nutrition Research states that consuming these foods helps meet nutritional needs and prevent disease.

In any case, it is advisable to consult the nutritionist, since the portions and the frequency of consumption may vary according to the needs of each person. Furthermore, not everyone can consume dairy products in the form of sweets.

Preparatory steps for cooking the three-milk cake

Milk sponge cake

This recipe combines the interesting flavors of the three-milk pie with the texture and creaminess of the meringue. For 8 people, we will need the following ingredients:

For the sponge cake

  • 3 eggs (180 g)
  • 2 glasses of flour (280 g).
  • 3/4 liter of milk (750 ml).
  • 1 glass of powdered milk (140 g).
  • 2/3 of a glass of butter (100 g).
  • 1 and 1/4 glasses of sugar (250 g).
  • 1 glass of condensed milk (250 ml).
  • 1/4 cup of cream (125 ml).
  • 6 teaspoons of baking powder (30 g).
  • 1 teaspoon of vanilla extract (5 ml).

For the meringue

  • 6 eggs (360 g)
  • 1 lemon (100 g)
  • 3/4 of a glass of water (180 ml).
  • 1 and 1/2 glasses of sugar (300 g).
  • 1/4 tablespoon of cream of tartar 82.5 g).

Preparation of the sponge cake

  • To begin with, we put the butter together with the sugar in a bowl and beat them with a whisk until the dough has a soft consistency. For this purpose, the ideal is to remove the butter from the refrigerator half an hour before starting to cook.
  • Meanwhile, we preheat the oven to 250 ºC as we continue with the previous step.
  • To continue with the dough, we will add the eggs one by one into the bowl with the mixture of sugar and butter and continue to mix so that they mix well. Next, we will add the flour and baking powder.
  • When we have obtained a well-blended dough, we will add the milk and vanilla extract, we will mix again and we will pour everything into a baking dish.
  • We will put the dough in the oven for about half an hour, checking the cooking point by piercing the sponge cake with a toothpick.
  • When the sponge cake has swollen and become golden on the top, we will remove it from the oven and pierce it all over the surface with a fork. Thanks to these holes, the milk cream will be able to penetrate well into the sponge cake.

Beware of the milk cream!

  • To prepare this milk cream, we  beat the condensed milk , the cream and the milk powder until a homogeneous mixture is obtained.
  • Finally, and without removing the sponge cake from the pan, we pour the cream over it, spread it well and let it rest and penetrate through the holes.

Preparation of the meringue

Once the sponge cake is ready, and while we wait for it to cool down a bit and for the milk cream to penetrate well, we are going to prepare the meringue. To do this, we need to follow the steps shown below:

  • First of all, we need to beat the egg whites until stiff. The ideal in this sense is to use an electric whisk with an aluminum head, instead of doing it by hand.
  • When it is almost ready, we will add the cream of tartar. This substance will cause the meringue to increase in volume  and take on a softer consistency. If we don’t have it, we can replace it with fresh yeast.
  • We set aside and let a saucepan with water and sugar heat over low heat. We keep stirring until the sugar dissolves completely and add some lemon zest.
  • We will continue to mix so that the sugar becomes caramel. We will have obtained this effect when, by lifting the spoon, the drops fall slowly.
  • Once the caramel is ready, we will pour it into a bowl with the egg whites and beat it intensively for about 6 minutes. Thus, we will get a good consistency and our meringue will be ready.
  • Finally, just put the meringue on the ready-made sponge cake and distribute it evenly  over the entire surface with the help of a knife or spatula.

Final touch …

As a last detail,  we can decorate the dessert with the addition of  red fruits on the top.
