Asparagus belongs to the group of plants called “herbaceous”. For this, they are vegetables.

But don’t get confused: this is not just any kind of vegetable. In fact, the specific type you will use for this recipe is very well known and has important health benefits for the body.

Green asparagus are the tomato substitutes in this preparation. They help the body eliminate accumulated toxins.

Furthermore, the mild flavor of this vegetable does not interfere with that of the broth or other ingredients.

Ingredients:

Asparagus and eggs
  • 1 bunch of green asparagus (180 g)
  • 1 hard-boiled egg
  • 2 cloves of garlic
  • 1 tablespoon of white wine (15 ml)
  • 2 cups of water (500 ml)
  • 1 large or 2 medium potatoes (180 g)
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • 2 tablespoons of Jerez vinegar (30 ml)
  • 1 tablespoon of sea salt (15 g)

Preparation

  1. Clean the asparagus well. Remember that sometimes they are full of dirt and you have to remove it.
  2. Cut them finely and set aside. Don’t break the tips.
  3. Add a few drops of olive oil to a pan. When it is hot, sauté the asparagus until they release their characteristic aroma.
  4. After having sauteed them, put them in the blender and also add the garlic, wine and water.
  5. Blend for a few minutes until you get a homogeneous cream. Pass it in a vegetable mill. You will notice the detached asparagus fibers.
  6. Then add the hard-boiled egg yolk, along with the salt and vinegar, and blend again. This time, you will gradually add the oil. Store in the refrigerator.
  7.  Peel and cut the potatoes. Then fry them in the pan. Once fried, add the preserved asparagus tips and fry them.
  8. Finally, dice the white of the hard-boiled egg to prepare a garnish to accompany the green asparagus gazpacho.

If you want to make this recipe vegan, just eliminate the egg. Enjoy your meal!
