1. Vegan cheesecake

Replace the cheese with soy yogurt or vegan cheese. The vegan cheesecake is great!

More than a cheesecake, it is actually a yogurt cake because you replace the cream cheese with soy yogurt. Of course, if you make vegan cheese yourself, you can use it.

Ingredients

  • 200 ml of vegetable milk
  • 3 soy yogurt
  • 1 tablespoon of agar-agar powder
  • 3 tablespoons of lemon juice
  • 12 vegan cookies
  • 50 g of margarine
  • Marmalade

Preparation

  • Start by preparing the base of the cake. First, crumble the vegan cookies into a powder. 
  • Then melt the margarine and pour it over the pulverized biscuits. Mix well.
  • Grease a mold and mash the biscuits on the bottom, pressing well to form the base of the cake. Place in the fridge for half an hour.
  • Dissolve the agar agar in cold milk, then bring it to a boil over medium heat. Stir all the time.
  • Add the yogurt and lemon juice. Beat until smooth.
  • Pour the cream on the base of the cake and put it in the fridge for at least another half hour. 
  • Finally, spread the jam on the cream, put it back in the fridge and voilà!

2. Vegan muffins

Vegan banana muffins.
For these vegan muffins, we use extra virgin olive oil instead of butter.

We will be using fruit and almond milk to make these super soft muffins. You can also add some chocolate or raisins.

Ingredients

  • ½ cup of almond milk
  • 4 ripe bananas
  • 1 1/2 teaspoons of baking soda
  • ½ cup of coconut sugar
  • 50 ml of extra virgin olive oil
  • 1 teaspoon of vanilla essence (optional)
  • ½ cup of chocolate chips or raisins (optional)

Preparation

  • Preheat the oven to 180 ° C (heat on top and bottom).
  • Mix the flour with the baking soda. Sift and set aside.
  • Blend the almond milk with the bananas, then add the flour to the mixture. Blend well.
  • Now pour in the oil, sugar and vanilla essence; stir until all the ingredients are well blended.
  • Prepare the muffin molds. Fill a third of the mold with the dough.
  • Garnish, if you like, with chocolate chips or raisins.
  • Bake in the oven for about 20 minutes. 

3. Oatmeal and Strawberry Cookies

Oatmeal biscuits are a classic of vegan pastry, ideal to be consumed as a snack.

These oatmeal and strawberry cookies are another great vegan pastry recipe. They are very easy to prepare and, above all, delicious.

Ingredients

  • 50 g of oats
  • 5 large strawberries
  • ½ banana
  • 2 tablespoons of peanut butter
  • 1 tablespoon of honey

Preparation

  • Preheat the oven to 200 ° C (top and bottom heat).
  • Mash the banana with a fork, then add the peanut butter. Mix well.
  • Add the spoonful of honey and mix again.
  • Add the oats and beat the dough carefully.
  • Now cut the strawberries and add them to the mixture
  • Line the pan with parchment paper.
  • Shape into balls with your hands and flatten them on parchment paper.
  • When you have finished the balls, bake in the oven for 15 minutes, until golden brown.

4. Apple tart

Apple tart among vegan desserts.
An ideal dessert for children. It is nutritious and free from refined sugars.

  • 1 cup of wholemeal flour
  • ½ cup of flour 00
  • ¼ cup of extra virgin olive oil
  • ⅓ cup of water at room temperature

  • ¼ teaspoon of ground cinnamon
  • 2 tablespoons of wholemeal flour
  • 2 tablespoons of brown sugar
  • To brush: almond milk (optional, to taste)

Preparation of the shortcrust pastry

  • Preheat the oven to 200 ° C (top and bottom heat).
  • Mix the dry ingredients, then add the olive oil. Knead with your hands until you get a grainy dough.
  • Add the water gradually and continue to knead until you get a homogeneous mixture.
  • Divide it into two portions.
  • Grease and flour the mold, then roll out the base. Set aside.

Preparation of the filling

  • Wash and peel the apples, then cut them into cubes.
  • Season again with cinnamon, sugar and a spoonful of flour.

Method

  • Put the filling on the base of the cake.
  • Roll out the other half of the dough and cover the filling. Alternatively you can get stripes for an even more beautiful effect.
  • Finally, brush with almond milk and sprinkle with brown sugar.
  • Bake for about 50 minutes or at least until the cake is golden and crunchy.
